Last year, after Easter, I came across an idea for bunny pancakes and mentally filed it away to try when the opportunity came around again. Although I pinned the recipe, there wasn’t much point as our kid’s are both allergic to dairy & soy. So, I adapted the yummy activity to be vegan and here are the results!
To make the pancake batter:
- 1 cup White Flour
- 1 Tablespoon Baking Powder
- 1/4 teaspoon Salt
- 2 Tablespoons Olive or (MELTED) Coconut Oil
- 2 Tablespoons Maple Syrup
- 1- 2 cups Almond Milk
Mix dry ingredients together first. Add in wet ingredients and do final mixing while your pan heats up. If you prefer thicker pancakes only use 1 cup of almond milk. For thinner pancakes, which is our preference, use 2 cups. They will be more crepe like. I made a variety of sizes, so everyone could decorate the way they wanted.
For the eyes & nose: Enjoy Life Foods Baking Chocolate. We got the dark chocolate morsels & the semi-sweet minichips. Our Whole Foods has a great alternative chocolate chips selection, so that is a great place to check if you’re on the hunt.
For the whiskers, ears, & detailing: So Delicious CocoWhip
We made a few bunny variations. My husband is the artistic one and he went for a very realistic looking rabbit. Yes, that is teeth and feet!
I, on the other hand, wanted it to be super cutesy.
In the end, I found the best way to make the face was to use one big chocolate chip as the nose and two minis for the eyes then pour the batter over the top and cook them that way. When they come off, let them cool and then decorate!
Special Tip: The whipped topping will start melting very quickly, so be ready to eat. Our son didn’t even need syrup, he just used the whipped cream and loved them! Our 11 month old daughter also enjoyed munching down on tiny pancake pieces sans chocolate. I’m really pleased with how they tasted and how much our kids appreciated them!
